- 2 cups of creamy white hominy, soaked overnight
- 1 lb of tender pork shoulder, cubed

- 1/2 cup of rich extra virgin olive oil
- 1 large onion, finely chopped
- 2 cloves of garlic, minced

- 1 tsp of smoky paprika
- 1 tsp of ground cumin
- 4 cups of homemade chicken stock

- Salt to taste
- Freshly chopped cilantro for garnish

- Heat the olive oil in a large pot over medium heat until shimmering.
- Add the pork shoulder, browning on all sides for about 5 minutes. Tip: Don’t overcrowd the pot to ensure a good sear.
- Stir in the onion and garlic, cooking until soft and fragrant, about 3 minutes.
